Oatmeal Banana Cake with Cream Cheese Frosting WW Friendly (Weight Watchers) I had some ripe bananas to use up so I made up this oatmeal banana cake with cream cheese frosting and it was delicious!

Cake Ingredients:

  • 2 Lg Eggs
  • 4 small Bananas (or 3 medium)
  • 1 cup plain fat-free Greek yogurt( or fat-free sour cream)
  • 1⁄3 cup Maple syrup (or brown sugar)
  • 1 1⁄4 cups all-purpose flour
  • 3⁄4 cup Quick-cooking rolled oats
  • 2 tsp Coconut oil
  • 1 tsp vanilla
  • 1 tsp Baking soda
  • 1⁄2 tsp Baking powder
  • 3⁄4 tsp salt
  • 1 tsp ground cinnamon

Frosting:

  • 4 oz 1/3 less fat cream cheese
  • 1⁄2 cup Confectioners’ sugar
  • 1⁄8 cup plain fat-free Greek yogurt(you can use 1-2 Tbsp milk instead)
  • 1/2 tsp Vanilla extract

Instructions:

  1. Mix flour, oats, baking soda, baking powder, salt and cinnamon together well in a medium bowl, set aside.
  2. In a mixer or by hand, mix together eggs, bananas, Greek yogurt, maple syrup, coconut oil, and vanilla until well incorporated.
  3. Mix dry ingredients into wet, by hand, don’t overmix.
  4. Pour batter into the prepared 9X13 inch baking dish and bake at 375 for 20-25 minutes or until a toothpick inserted comes out clean.
  5. Let the cake cool completely before frosting.
  6. To make the frosting, mix all frosting ingredients together until creamy.
  7. Frost the cake once it is cooled.
