Ingredients:
- 1 1/4 cups self-rising flour (1 cup for dough and the 1/4 cup to knead and roll out dough with)
- 3/4 cup Fat-free Greek yogurt
- 1/2 cup reduced-fat cheddar cheese (I use a 40% less fat cheese)
- 8 oz lean ground turkey
- 1/4 cup no sugar added ketchup
- 1/4 cup no sugar added BBQ sauce
- 1 Dill pickle spear, chopped
- 1/2 medium onion chopped finely
- 1/2 red bell pepper chopped finely
- 1 tsp Worcestershire sauce
- 1/2 tsp Dijon mustard
- 2 tsp brown sugar
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1 tsp minced garlic
- I used a cooking spray but recommend using a beaten egg to brush the tops
- ground pepper to taste
Instructions:
- Cook meat, bell pepper and onion in a medium-sized frying pan on med/high heat until meat is browned and pepper and onion are softened.
- Salt and pepper to taste.
- Reduce heat to medium and add garlic, chili powder and ground cumin and cook another minute.
- Add in Worcestershire sauce, mustard, ketchup, BBQ sauce, brown sugar and pickle, stir well.
- Reduce heat to low and let mixture continue to cook for a few minutes.
- Remove from heat and let cool down.
- Mix 1 cup of flour with Greek yogurt until well combined.
- Knead the dough for about five minutes.
- Once the dough is well kneaded, cut into 8 equal parts and roll out each part into roughly a 5-inch diameter circle.
- Put about 3-4 Tbsp of meat mixture in the middle of the dough, followed by 1/2 Tbsp of cheese.
- Pull the sides of the pastry upward and together and pinch to close.
- On a baking sheet lined with parchment paper, place seam side down.
- I used the cooking spray for the tops but recommend brushing the tops of the balls with a slightly beaten egg.
- Bake at 425 for about 15 minutes.
