Air Fryer Stuffed Peppers Ingredients
Ingredients:
- 9 bell peppers red, yellow and orange
- 0.38 cup water
- 0.75 lb ground turkey breast LEAN
- 1.5 small zucchini small dice
- 3 cups crushed tomatoes no salt added
- 1.5 cup mushrooms small dice
- 2.25 cups cauliflower rice
- 1.5 tbsp Worcestershire sauce
- 1.5 tsp salt
- 4.5 Babybel Mini Light Cheese Rounds grated
Instructions:

- Heat a non-stick skillet on medium-high
- Add water, ground turkey, zucchini and mushrooms
- Brown for five minutes and add salt
- While the turkey is browning, heat cauliflower rice in the microwave according to the package directions
- On over low heat for 2-3 minutes, add Worcestershire, rice and tomatoes.
- While the turkey mixture is cooking, prep peppers by slicing off the tops and cleaning the insides (save the pepper tops to use in other recipes)
- Spoon turkey mixture into peppers
Air Fryer Instructions:
- AF at 350 for 10 minutes.
- Open AF and add shredded cheese.
- Fry an additional 5 minutes in the air fryer until the cheese is melted and browned
Oven Instructions:
- Cover with aluminum foil, then cook at 350 for 30 minutes.
- Uncover and add shredded cheese.
- Bake an additional 15 minutes (uncovered)
Notes:
- When you cook ground turkey, you can add water to the skillet rather than oil. I learned this as part of a low-calorie cooking show that never used fat – it really works!
- I used a packet of cauliflower rice and cooked it according to the directions.
- If you want lower points, you can leave the cheese together, but it’s nice to have.
