Ingredients for Apple Pie Baked Oatmeal.
Ingredients:
- 6 large apples.
- 2 tablespoons cinnamon.
- 3 tablespoons Stevia.
- ¾ cup water.
- 4 (320g) cups old-fashioned oats.
- 1 cup (240mL) of unsweetened original (or vanilla) almond milk.
- 2 cups (492g) of unsweetened applesauce.
- 4 large eggs.
- ½ cup (120mL) sugar-free maple syrup.
- 4 teaspoons pure vanilla extract.
- 1 teaspoon baking powder.
- ½ teaspoon salt.
Cinnamon Glaze:
- 9 ounces of nonfat Greek yogurt
- 6 tablespoons (90mL) sugar-free maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon pure vanilla extract
- Dash nutmeg
Optional (for garnish):

- 5g fat-free Reddi Wip
- Cinnamon & Stevia mixture
Instructions:
- Core and dice apples (I didn’t peel).
- In a medium saucepan, combine apples, cinnamon, Stevia, and water, and toss to coat.
- Bring water to a boil, cover, and cook on medium-low for about 20 minutes, stirring about every 5 minutes.
- Uncover, and turn the heat to low to evaporate some of the water.
- Preheat the oven to 350 degrees.
- Then spray a 9” x 13” glass baking dish with cooking spray.
- Combine oats, milk, applesauce, eggs, syrup, vanilla, baking powder, and salt In a mixing bowl.
- Stir in cooked apples with the remaining liquid.
- Pour into the prepared baking dish.
- Bake for about 30 minutes until set and lightly brown.
- Serve warm or cold with glaze.
- Store it in the refrigerator for up to 1 week.
- Stir all ingredients together in a bowl for the glaze.
- Cover and refrigerate.
Notes
- In the microwave reheat each piece on HIGH for 30 seconds.
- Put a little warm oatmeal with a couple of spoonfuls of glaze.
- If desired, garnish with fat-free Reddi Wip and cinnamon & Stevia mixture.
