HOW DO I MAKE MY WEIGHT WATCHERS BLUEBERRY MUFFINS?

1. Preheat the oven to 375 degrees.

2. Then combine egg, water, applesauce & sugar substitute in a large mixing bowl.

3. Blend then add Kodiak pancake mix and baking powder.

4. Stir until well combined.

5. Fold in fresh or frozen blueberries.

6. Spray the muffin tin with cooking spray or you can use muffin foil-liners.

7. Pour batter into 12 muffin cups.

8. Bake for 16 to 20 minutes.

9. Remove the muffins from the oven and allow them to cool for about 5 minutes before removing them from the muffin tin.

  • 1/4 cup of Lakanto Classic Monkfruit Sweetener
  • 1 large egg
  • 1 cup fresh or frozen blueberries

INSTRUCTIONS

  1. Made these muffins and my husband and I both think they’re delicious. Very moist and sweeter than I expected. Will be making them often.

  2. I made this recipe today but baked it in an 8” square pan and cut into 12 squares. Baked for about 20 minutes until a toothpick came out clean. Worked perfectly and the squares are very tasty. Next time I would use a little more sweetener, but no other changes. Very good with a cup of coffee.
