  • 1 Cup Chickpeas Drained & rinsed
  • 1 Cup Carrots shredded
  • 1 Cucumber Diced
  • 1/3 Cup Red onion Diced
  • 1 1/2 Cups Blueberries
  • 1/4 cup Sunflower seeds
  • 1/3 Cup Dried cranberries 50% less sugar

Dressing

  • 1 tsp Avocado oil
  • 2 tsp Dijon mustard
  • 2 TBSP Lemon juice
  • 1 TBSP Apple cider vinegar
  • 1 tsp Poppy seeds
  • 1 TBSP Pure maple syrup
  • 2 Garlic cloves minced
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. In the bowl add the chopped broccoli, shredded carrots, chopped cucumbers, diced red onion, sunflower seeds and dried cranberries.
  2. Then add the dressing and season the salad with salt and pepper to taste.
  3. Enjoy!
