Ingredients:
- 1⁄2 cup Sugar
- 3 large Eggs
- 1 cup plain fat-free Greek yogurt
- 1⁄4 cup Vegetable oil
- 1⁄4 cup unsweetened applesauce
- 1 tsp Vanilla extract
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 tsp Baking powder
- 1⁄4 tsp Baking soda
- 1⁄4 tsp salt
- about 1 Tbsp Lemon zest, zest from 1 lemon
- 4 Tbsp Fresh lemon juice divided, 2 for bread, 2 for glaze
- 1/2 cup Swerve confectioners sugar replacement
Instructions:
- In a large mixing bowl or mixer, add the eggs, sugar, and yogurt.
- mix until smooth.
- Add oil and applesauce and mix again.
- Zest and juice your lemon.
- Add the lemon zest, lemon juice, and vanilla extract then mix again.
- In a separate bowl, add the flour, baking powder, baking soda, and salt, stir until combined.
- Slowly mix into moist ingredients, and mix until just combined, don’t overmix.
- Some lumps may still remain.
- Pour batter into a prepared 9X5 loaf pan.
- Cook at 350 for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely in the pan.
- To make the glaze, whisk together Swerve confectioners and 2 Tbsp of lemon juice.
- You can add more juice if you like a thinner glaze.
- When the cake has cooled, pour glaze over the top.
