Lemon Cheesecake Ingredients
Ingredients:
- 3 eggs
- Three cups of nonfat plain Greek yogurt or nonfat plain yogurt
- 1 small box of instant sugar-free/fat-free cheesecake or vanilla pudding.
- 1/2 Tbsp. lemon extract.
- 3 Tbps. sugar substitute ( I used stevia)
- 1 Tbsp. fresh lemon juice.
Directions:
- In a mixing bowl add eggs, lemon extract, lemon juice, sugar substitute and beat well.
- Add yogurt and dry pudding, mix well.
- Pour into a lightly greased nonstick cooking spray pie dish or springform pan. I used a 9-inch springform pan.
- Bake 350 for 30 min.
- It may look jiggly at first but once it’s chilled, it will set.
- Let it cool down for about 15-20 min, then cover it with plastic wrap and let it cool overnight in the refrigerator.
- It’s recommended to chill overnight before eating.
- It may take up to 12 hours for the texture and flavor to be fully set.
- It’s better to chill it for a longer time for the better it tastes.
