HOW DO I MAKE MY PUMPKIN BARS?

1. Preheat the oven to 350 F and spray 10 x 15 x 1-inch jelly roll pan with non-stick cooking spray, set aside.

2. Combine sugar, applesauce, and brown sugar in a bowl.

3. Mix the well until combined, then slowly add the eggs and pumpkin.

4. Combine the flour, pumpkin pie spice, baking powder, and baking soda in another bowl.

5. Mix the flour mixture with the wet ingredients and stir until well combined.

6. Spread the mixture into the prepared pan.

7. To make the cream cheese topping mix the cream cheese, stevia, and yogurt together until smooth.

8. By using a spoon, drop lumps of cream cheese mixture into the pan of pumpkin mix.

9. Swirl the mixture with a knife to blend together slightly.

10. Bake for 25 to 30 minutes until the cake tester inserted in the center comes out clean.

11. Let cool completely in the pan on a wire rack before cutting into squares.

12. Serves 24, cut in half and then into 12 strips for a single serving.
